Not only is my mom is here babysitting Zekey because his childcare lady took a 6 week vacay (6 MOTHER-GRABBIN’ WEEKS), but she will also cook anything I want! And if you know me you know I ain’t asking her to steam some vegetables. No, my rotund ass wants something sugary. Lucky for me, Mom Senior is known for her homestylin’ cookies. No joke. Kids used to smell them from blocks away and suddenly appear at our doorstep.
Those were the olden days, before I knew about the high price of butter and eggs. A couple of easy substitutions and before you know it, Zeke’s friends will be lining up at my doorstep for this delish vegan version of chocolate chip cookies.
Here’s how it goes:
1 1/4 cup dark brown sugar
1/2 canola oil
6 tablespoons vanilla soy milk
1/4 cup sugar
1/4 cup applesauce
2 tablespoons vanilla
Mix that all together real nice like. Then pile on this stuff:
3 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
chocolate chips
Throw ’em in the oven at 350 for about 10 minutes and BAM! Stuff your face!
I would be remiss if I didn’t mention that my mom ain’t the best at measuring. She has been baking stuff for us kids for 1 million years and I know there is plenty of eyeballing going on with these quantities. Just sayin’.
