Because I’m on a sugar high that has lasted about a good solid month now (I’m pretty out of control actually), I’ve decided to go cold Tofurky and cut it out for at least a couple weeks, STARTING TOMORROW! Guess what that means for today? SUGAR BINGE, BIG TIME! My blood is probably syrup. Weeeeeeeee.
Check out what I had for dinner. Orange Dreamsicle cupcakes! No joke. So easy, so creative, so crack-like.
Grab a box of yellow cake mix (Duncan Hines is vegan), one cup of orange juice and one 6 oz vegan yogurt.
Whisk the OJ and yogurt together and then dump in the cake mix. Bake at 350 for 15-20 mins, depending on your oven.
For the frosting, I used a container of store bought stuff and mixed a little red and yellow food coloring in it to make a nice, light orange color. And, I purposefully didn’t completely mix the frosting because I think the white streaks looked cute! You can’t really see them in the picture 🙁
They honestly taste just like the delicious dreamsicles of yesteryear. Mom tested. Mom approved.
